The charming dining room of the Swedish Country Inn features freshly baked bread including Swedish rye bread and our famous Swedish Tea Rings.  We ship these festively decorated rings anywhere in the U.S.  We also bake 2 kinds of skorpor (rusks) including mandleskorpor (almond rusks) and skorpor (made with pecans).  As you leave the Inn you may wish to take a Swedish tea ring or a bag or two of skorpor as a reminder of your stay here.
 

Our Swedish breakfast buffet is served each morning to our guests and to the public.  We serve from 7 to 10 a.m. Monday through Friday, and 7 to 11 a.m. on Saturday and Sunday.  The breakfast is included in a nights stay and is available to the public for $6.50 per person.

The menu is the type of breakfast found throughout Sweden whether you are in a large hotel, small country inn or a guest in a Swedish home.  Our breakfast includes Swedish meatballs, lingonberries, eggs, porridge, cheese, cold meats, pickled herring, fruit, vegetables, waffles with lingonberry syrup and the best rye bread in Lindsborg.  Freshly ground coffee accompanies this beautiful breakfast.

 

Swedish Country Inn - Bakery  Skorpor translates to "toast".  The following is an old Swedish recipe that was brought to Lindsborg by the first Swedish immigrants in 1869.  These are available in our lobby to enjoy with coffee or tea or they may be purchased to take home.
 
Swedish Skorpor (Rusks) Recipe
1 c sugar 1/2 tsp salt
1/2 c shortening 1 c chopped pecans
1 c buttermilk Small amount of milk
1 egg 3 c flour
1/2 tsp baking powder 1 tsp baking soda
Cream shortening and sugar; add remaining ingredients.  Spread dough in greased 9 x 12 pan.  bake at 350 degrees for 1 hour.  Remove from oven and brush with cream.  (You can sprinkle with cinnamon sugar at this time).  Let cool for 15 minutes.  Turn onto a baking sheet and cut into strips 1 1/2 x 3 inches, separate apart.  Dry in oven at 200 degrees for 1 - 2 hours.  These will keep a long time!  Great to dunk in your coffee also!
